Black Beans & Rice - Delish

So this is late but totally worth it. This is one of my favorite diet-friendly recipes, and it's so incredibly easy to make. I can't take credit for the recipe, but I found it a couple of years ago on Food Network. Are you cooking for kids? Another great thing about this website; it's one of my kids favorite recipes as well. So on the plus side, I thought about taking a picture when I saw how gorg the peppers and onions looked in the skillet but I didn't take another picture throughout the cooking process or the finished product. Luckily, there's a yummy picture online, so that will do in my learning curve of blog-writing.
How delish does this look?! It totally is! Here's the recipe:
Ingredients
1/4 cup olive oil
2 onions, finely chopped
2 green bell peppers, chopped
3 garlic cloves, chopped
4 bay leaves
1 tablespoon ground cumin
2 cups long-grain white rice 4 (14-ounce) cans black beans, drained and rinsed
2 (14-ounce) cans diced tomatoes with green chiles drained
2 cups water
1/4 cup apple cider vinegar
Kosher salt and freshly ground black pepper

Directions Heat a large pot over medium-high heat and add the oil. Stir in the onions, peppers, garlic, bay leaves and cumin. Stir and cook for 8 minutes. Stir in the rice, black beans, tomatoes, water, vinegar and salt and pepper. Bring to a boil, cover and reduce heat to low. Cook for about 40 minutes or until the rice is tender. Serve hot.

So, I do make a few changes. I use 1 can of red beans, I don't use Rotel just regular diced tomatoes, and I only use 1 onion. But that's mostly for the kids sake. Either way, it's Easy Peasy! :)
